iOS15 for iPhone 7+

Technically speaking, iOS 15 can be installed on iPhones all the way back to the 6S and original SE. Whether it will run it well is in question, I suppose.

It is available in Settings under the update function. I guess I should wait to see if people have a problem before installing it.

There have been a few updates already, fixing some of the initial bugs, and it is presently at 15.1
If you have been keeping up with the 14.nn updates then you don't need to hurry too much, especially if 15.1 doesn't offer any new features your really MUST have, but if you are farther back then that, you really should consider 15.1 for all the security stuff.

Thanks, I just installed the latest iOS 14, so I guess I'll wait awhile as I don't see anything I need in iOS 15.

There shouldn't be any major problems or slowdowns running iOS 15 on an iPhone 7, but for battery and other reasons (starting with "this is almost certainly the last supported OS for your phone"), you should probably be thinking about/planning for its replacement.

Depending on when Apple stops offering the latest version of iPhone for the iPhone 7, you only have two years beyond that to receive security updates. After that, the iPhone should be replaced for security reasons (and will be VERY VERY OLD at that point and likely suffering other issues).
