I believe I am correct in saying that the iPhone 8 is no longer getting security updates, so I would take that one off your list unless you plan on using it without data or Wi-Fi. As a telephone and a camera, such an old model should continue to work fine -- but it's no longer safe to put it on the Internet if its not getting security updates anymore, and the internet is required for email.

Worse news, I’m afraid. The iPhone X will be obsolete (no more updates) later this year.

I’d suggest getting an iPhone 11 or later, or the second-generation (2020) iPhone SE.

I took your advice and found an iPhone SE 2nd Generation on Amazon. It seems to be just what I was looking for. I can't believe how slick Quick Start was to use.
