I've just agreed to help an organization edit, with a lot of cutting and pasting, some large PDF documents (300-400 pages)
What do you recommend as a PDF editor for the Mac?

There's a couple of different approaches, but the best one in your situation is to pony up (or make them pony up) for PDFpen from Smile: https://smilesoftware.com/pdfpen-family

(the link above compares the regular and Pro version so you can figure out which one will be best for your needs.)

At the end of the day, though, PDF was not designed to be edited -- so if the edits turn out to be extensive, I might suggest tools that convert PDF text back into a Word-compatible format, make the corrections, and then make a new PDF from that or a better layout tool.
